Lemon Butter New Potatoes

My wife is always trying different sides to go with the entree I’m preparing. As far as potatoes go, this is one of my favorites.

12 small red potatoes
1/3 cup butter
1 T. lemon juice
1 tsp. lemon peel, grated
¼ tsp. ground nutmeg
1 T. parsley
Salt and fresh ground black pepper to taste

1. Place 12 small red potatoes in a Dutch oven and cover with water. Boil for 15-20 minutes or just until tender. Drain; remove from Dutch oven; set aside.

2. In the same Dutch oven, heat butter, lemon juice, lemon zest, salt and pepper, and nutmeg until blended; stir in potatoes and heat through. Sprinkle with parsley.
