Granola Ranger Cookies

Cool Spring days are a good time to use the oven. It not only cooks up good food, but also warms the kitchen. Cookies are one of my wife’s weaknesses. This recipe is one she use to make for our children when they were growing up. Also, one of my favorites.

½ cup shortening
½ cup granulated sugar
½ cup brown sugar (packed)
1 egg
1 tsp. vanilla
1 cup flour
½ cup soda
½ tsp baking powder
½ tsp salt
2 cups Nature Valley Granola

Heat oven to 350 degrees. Mix shortening, sugar, brown sugar, egg and vanilla thoroughly. Stir in remaining ingredients. Drop by teaspoonfuls 2 inches apart onto a lightly greased baking sheet. Bake 10-15 minutes. Immediately remove from baking sheet. Delicious!
