Bacon-Swiss Mashed Potatoes

Potatoes, potatoes, potatoes the versatile veggie that can be your side or main dish. I’m a meat and “potato man”. There are a hundred ways you can dress them up.

2 lg. russet potatoes
1 cup milk
1 stick butter or margarine
1 cup shredded swiss cheese or cheddar
2-3 strips bacon, cooked very crisp, crumbled
3 T chopped green onions
Salt and pepper to taste

Cook potatoes until done. Add next three ingredients, salt, and pepper. Mix potato mixture with electric mixer until potatoes are crumble-like; not too smooth. Add crumbled bacon and green onions.

Serve hot! Good with grilled steaks.
