Buttermilk Lemon Pie

As far as Southern cooks are concerned, buttermilk is a staple. It adds rich flavor to a variety of baked goods, this one in particular —

3 eggs
1 ½ cups sugar
½ cup buttermilk
¼ cup butter, melted
1 tbsp flour
2 tbsp fresh lemon juice
1 tsp lemon extract
1 unbaked 9-inch pastry shell

Beat eggs; add next six ingredients, and mix well. Pour into pastry shell.

Bake at 425 degrees for 10 minutes; place foil over edges of crust and bake 15 to 20 minutes longer, or until set. Let cool on wire rack.
