From the Chef’s Corner
If you are a coffee buff like my wife, and have a love of chocolate like most people do, try this recipe. It is delicious!
12 large marshmallows
½ cup strong coffee
1 cup whipping cream, whipped
Combine marshmallows and coffee in a medium saucepan; cook over low heat until marshmallows melt, stirring occasionally. Cool.
Fold whipped cream into coffee mixture. Spoon into an 8- inch square Pyrex dish. Freeze about 3 hours or until firm. Sprinkle top with chocolate shavings and cut into squares to serve.
