Chicken Elegante

If you want to impress friends at one of your dinner parties, try this simple but tasty dish. It will serve about 12 people, but you can cut it in half if you want. (I use thighs for this dish!)

3 fryers, cut up
4 tsp. Salt
½ cup butter
2 large cans peach halves with syrup
2 medium onions, cut into rings
2 tsp. Lemon juice (fresh lemons)
1 tsp. Ground ginger or fresh ginger, chopped very fine
4 tsp. Cornstarch
¼ cup water
2 green bell peppers, cut into strips

Sprinkle chicken with 3 tsp. salt. Brown in butter. Drain peach syrup into skillet. Add onions, lemon juice, ginger, and 1 tsp. Salt.

Cover and simmer for 30 minutes.

Add green peppers and simmer 10-15 minutes longer.

Blend cornstarch with water; stir into chicken mixture. Add peaches and simmer 5 minutes longer. Serve with cooked rice. Delicious!
