From the Chef’s Corner
3 fryers, cut up
4 tsp. Salt
½ cup butter
2 large cans peach halves with syrup
2 medium onions, cut into rings
2 tsp. Lemon juice (fresh lemons)
1 tsp. Ground ginger or fresh ginger, chopped very fine
4 tsp. Cornstarch
¼ cup water
2 green bell peppers, cut into strips
Sprinkle chicken with 3 tsp. salt. Brown in butter. Drain peach syrup into skillet. Add onions, lemon juice, ginger, and 1 tsp. Salt.
Cover and simmer for 30 minutes.
Add green peppers and simmer 10-15 minutes longer.
Blend cornstarch with water; stir into chicken mixture. Add peaches and simmer 5 minutes longer. Serve with cooked rice. Delicious!
