Chicken, Apple, and Smoked Gouda Salad

Summer is here and time to put the soul comfort food recipes that were so satisfying during the cold winter away. I enjoy salads for lunch as long they have some variety of meat in them. This is one of my favorite. One deli-style rotisserie Chicken is a perfect amount for this recipe.

2 lg. gala apples, thinly sliced
2 TBsp. fresh lemon juice
1 (6 oz.) pkg. baby spinach and spring green mix
3 cups shredded cooked chicken
1 small red onion, halved and sliced
1 ½ cups (6 oz.) shredded smoked gouda cheese
1 ½ cups thinly sliced celery
1 cup sweetened dried cranberries
1 cup salted roasted pecans
Honey-Mustard dressing








1. Toss apple slices with lemon juice.
2. Layer salad greens, applies, chicken and next 5
ingredients in a large glass bowl. Serve immediately, or
cover and chill up to 8 hours. Toss salad with ¼ cup Honey-
Mustard Dressing just before serving. Serve with remaining
dressing and crackers, or your choice.




Honey-Mustard Dressing

Whisk together 1 cup mayonnaise; ¼ cup chopped fresh basil; ¼ cup each yellow mustard, Dijon mustard and honey; and ½ tsp. ground red pepper.
