From the Chef’s Corner
I love blueberry muffins, but I haven’t found the perfect recipe yet. I’ll have to admit I haven’t tried this one yet but I am going to this week.
1 ½ cups flour
1 TBs. baking powder
1 cup sugar
½ tsp. salt
1 cup milk
½ cup vegetable oil
2 tsp. vanilla
¾ cup blueberries, fresh or frozen
1. Preheat oven to 350 F.
2. Combine flour, baking powder, sugar and salt in a bowl.
3. Combine milk, eggs, oil and vanilla in a large bowl. Mix
until well combined.
4. Add dry ingredients to egg mixture. Mix until just
moistened. Do not overmix.
5. Fold in blueberries. Divide batter into 12 2 ½ inch paper
lined muffin cups. Bake for 18—22 minutes, until tops are
