Perfect Prime Rib
1 ½ tsp. Kosher salt or sea salt
2 tsp. fresh ground black pepper
1 TBsp. extra virgin olive oil
(6 lb.) prime rib roast (about 3 ribs)
Fluffy Horseradish Sauce
Garnish: Rosemary Sprigs
1. Combine salt, pepper, and olive oil; rub evenly over roast.
Place roast on a wire rack in an aluminum foil-lined roasting pan.
2. Bake at 450F for 45 minutes; reduce heat to 350F and bake 45
minutes or until a meat thermometer inserted in thickest portion
registers 145F (medium-rare) or to desired degree of doneness.
Remove from oven, cover loosely with aluminum foil, and let stand
20 minutes before slicing.
Fluffy Horseradish Sauce
With just four ingredients, it is easy to whip up while the roast
is standing.
1 cup Whipping Cream

Salt to taste
1. Beat 1 cup whipping cream at medium-high speed with a
heavy-duty stand mixer for 1 minute or until stiff peaks form.
2. Fold in remaining ingredients. Serve immediately, or cover
and refrigerate up to 8 hours.
