From the Chef's Corner
Entertaining can be easier than ever, if you are short on time, buy a rotisserie chicken from the supermarket. It makes a quick start for a salad or main dish. My wife likes this recipe for luncheons.
4 cups chopped cooked chicken
3 celery ribs, washed, diced ( about 1 ½ cups)
1 cup sweetened dried cranberries
½ cup chopped pecans, toasted
1 12/ - 2 cups mayonnaise
1/3 cup honey or less
Salt and pepper to taste
Garnish: chopped toasted pecans
Combine first 4 ingredients. Whisk together mayonnaise and next 3 ingredients. Add to chicken mixture, stirring gently until combined.
Garnish, if desired. Very tasty!
