Warm Pimiento Cheese Dip

Looking for a variation in cheese dips? Here is one of our favorites from Harper's Restaurant in Charlotte, North Carolina. Served as a dip, dolloped on a hamburger, or in a grilled cheese sandwich—it is always good.
8 oz. extra sharp cheddar cheese
1 jar (4 oz) whole pimientos, drained
1/2 cup mayonnaise
1 Tbs. Spicy brown mustard
1 1/2 tsp. red wine vinegar
1/8 tsp. celery salt
1/8 tsp. ground black pepper
pinch of garlic powder to taste
1. In food processor, with shredding disk attached, shred cheddar. Remove disk and attach knife blade.

2. To shredded cheese in food processor bowl, add pimientos and remaining ingredients; pulse just until mixture is blended and cheese is still slightly coarse.

3. Heat cheese mixture in microwave-safe serving dish in microwave oven on High 2 minutes or until cheese is mostly melted, stirring every 30 seconds. Try it - you'll like it!
