My family are muffin eaters. Here are a few pointers that will make your “muffins from scratch” turn out mouth watering. This recipe does not require a standing mixer, but when making the batter, be sure to whisk in step 2, then fold carefully in step 3. There should be no large pockets of flour in the finished batter, but small occasional sprays may remain.

Last Saturday morning at approximately 3:50 a.m., Alicia (Allie) Snawr, 38 years of age, from Blue, was traveling northbound on Highway 77 just south of the Lexington City Limits. It appeared that she was turning onto Loop 123 at the outskirts of the City.

Long Awaited Bridge Widening Ribbon Cutting

Last Saturday afternoon, Texas Department of Transportation, along with US Congressman Michael McCaul (R-TX, 10th District) and State Representative Tim Kleinschmidt cut the ribbon on the new FM 696 bridge over Pin Oak Creek. The ribbon was cut by David Sherrill, a life long resident of Blue who initiated a petition to have this and another bridge on FM 696 widened.

County Crime of the Week

Lee County Sheriff Rodney Meyer announced this week that Crime Stoppers needs help in solving a crime that happened sometime between Thursday, June 30, 2010 and Friday July 1, 2010 at 6:00 p.m. During that time, burglars broke into a barn belonging to Donald Brown located off CR 411. The suspects stole a 2010 Dark Green Polaris Ranger 4x4 and a Phoenix Air Compressor.

Robert Lee Pourner was born on January 23, 1960 in Orange, California to Loye & Gloria (Brady) Pourner. He married Ronda Kay Jeremiah and was a truck driver. Robert was also a U.S. Army veteran.

While on routine patrol Deputy Aderhold located an open door at a local business. The building was checked and found to be secure. The business owner was notified.

Deputy York was dispatched to Hwy 21 East after a motorist reported horses out on the roadway. The highway was checked and the animals were no longer on the road.

The Lexington Police Department received a call to respond to the Loop and assist with a major crash. DPS handled the crash scene. The big rig and a smaller truck were involved in a crash sending one individual by Starflight to the hospital.

The Lexington Eagles opened the 2010 season with a 60-0 whitewashing of the Smithville Tigers. The Eagle offense generated 561 yards total offense and the defense limited Smithville to 69 yards offense in the one-sided game.

Lady Eagles Hammer Hempstead

The Lady Eagles had their way with the Hempstead Lady Cats Friday sweeping all three matches.

The JV’s split with Hempstead. The JV Green won 26-24, 20-25, 15- 10. The JV Gold won 25-23, 23-25, 25-19. The Lady Eagle Varsity swept the Lady Cats 25-18, 25-21, 25-21.

Lady Eagles Drop Dime Box

In a varsity-only match the Lexington Lady Eagles dropped Dime Box in three games 25-8, 25- 13, and 25-9. The match was over quickly as the Lady Eagles dominated the entire contest.

This was a varsity-only match because Dime Box doesn’t have enough players to field more than one team.

Eagles to Test Blanco

Lexington will travel to Blanco Friday night to tangle with the Panthers. Blanco defeated Fischer Canyon Lake 12-7 in their 2010 opener. The Panthers have had five consecutive seasons of 10 wins or more. Last season they were 12-2 Regional Finalists. Smithville native Danny Rogers is the architect of the Blanco program.

We got to see an amazing football game Saturday night. Tommy Jackson and I went to the Westlake- Lake Travis game in Darrell Royal-Memorial stadium with about 30,000 other football fans. We certainly got our money’s worth. Westlake moved out to a 15-3 lead before Lake Travis came roaring back in the second half to win 32-21. It was the 47th straight win for LT.

Sophomore Mackenzie Brown, after being named MVP at the Rockdale Tourney in July, brought an encore performance to the Lexington Back-To-School Tennis Tournament by winning 3 events and placing 2nd in another. Brown teamed with Rick Spencer in the Adult Mixed Doubles to defeat the Maldonado’s from Rockdale in the finals and Kerry Bexley and Ally Abshire in the semifinals.

Robertson Takes 2nd at College Station

Coby Robertson placed 2nd at the College Station Tennis Tourney in Boys 8 Year Old Singles. There were 13 entries in the event. After receiving a bye, Coby defeated a College Station player 8-3 in the quarterfinals. He then met a Huntsville player in the semifinals and dominated again with an 8-2 win. The Final was the most exciting match in the tournament.

The Giddings Buffaloes opened up a 28-0 lead and then cruised to a 28-14 win over the Burnet Bulldogs in the first game played at the newly turfed Buff Stadium. Eric Rimes rushed 20 times for 204 yards and Spencer Fitzhenry rushed 14 times for 183 yards and two scores. The state ranked Buffs are beginning to show why they deserve the ranking.
